We currently have enough volunteer judges but will continue to take names through August 15 for backups the morning of Saturday, August 24 should the number of teams grow.  Judges without prior contest commitments are welcome!

Rules & Guidelines

  • Contestants may check into the BBQ grounds beginning at 8:00 AM Friday, August 23, 2019

  • Categories for the 2019 Holy Smoke BBQ Contest are as follows:

• BEEF BRISKET
• CHICKEN
• PORK RIBS
• Pork

COOKED ON SITE:  No pre-marinating, pre- cooking, or pre-spicing prior to official start time. Organizers have established an official START TIME as Friday, August 10 at 5:00pm.

SAUCE: You may COOK with sauce but DO NOT add sauce, marinade, sop, or juice to meat or container once the meat is prepared for judging. DO NOT add any additional spices or sauce to meats once prepared for judging. No garnishing or markers allowed.

  • Cooks are to prepare and cook barbecue in as sanitary a manner as possible. Cooking conditions are subject to inspection the organizers and/or County and State Health Inspectors. Conditions found to be unsanitary will be grounds for disqualification from this cook-off. Fires must be wood or wood substance. No holes, open fires, or dug pits will be allowed. All teams must have at least ONE fire extinguisher on site.

  • Attend the Cooks Meeting at 6:00 PM Friday for explanation of the rules, any additional instructions and confirmation of turn-in times for each category. Tentative judging times are as follows:

August 24, 2019

- Chicken at 12: 05

-  Beef Brisket at 12:35

- Ribs at 1:05

- Pork at 1:35. 

  • BLIND JUDGING: You will receive 1 tray per category. Each of these trays will be numbered and then renumbered after turn in so that the judges do not know which team’s food they are tasting.

  • Any nudity, lewdness, or any form of vulgarity will NOT be allowed. NO pyrotechnics or explosives are allowed. Any intentional use of the above by a team will result in disqualification, removal from grounds and elimination from the tournament.

  • QUIET TIME is 10:00 PM Friday until 7am Saturday morning.

  • Contest spaces of 20’x20’ will be available for each team. There is no electricity available at these spots. All cooking facilities, rigs, props or show articles must fit within your team’s contest space.

  • The Team Captain for each team will be responsible for the conduct of his team, guests or invitees. As well, the Team Captain will be responsible for his team’s compliance with the rules and regulations herein set forth. EXCESSIVE USE of alcoholic beverages will be grounds for disqualification. Contestants must not give, offer, sell or donate alcoholic beverages to the general public.

  • HOLY SMOKE OFFICIALS RESERVES THE RIGHT TO MAKE ADDITIONAL RULES AND REGULATIONS AS THE SITUATION WARRANTS. DECISIONS OF GO OAK CLIFF ARE FINAL.

 

The Do Dads and St James Catholic Church will not be held responsible for theft or damage to equipment or bodily injury of any kind.
